When I was talking with sis after a close to 80hr of power outage, she commented we are indeed lucky in Singapore. The worst weather we get back home is hot, humid weather, somewhat like Houston, more humid, maybe not as hot as summer heat, I wasn’t sure since I was hardly out in the heat as much. At the other spectrum, when it rains, it rains hard, that is about it. Life goes on in Houston after Hurricane Ike. I didn’t experience so much the rain, but more of wind. The weather has been pretty cool last few days, I still prefer the summer warmth. The cool weather gave me a few bouts of runny nose – my usual reaction to change of temperature.
After I got back my power yesterday, I was really excited. I contacted my loved ones back home, updated my journal, my facebook status, replied to all emails. Then all of a sudden I got disconnected for the next 24hr. What did I do? I read a third of Appetite For Life, The Biography of Julia Child by Noel Riley Fitch - but I prefer the flavor and writing style in My Life in France by Julia Child and Alex Prud’Homme; Then I started on Baking with Julia by Dorie Greenspan today, a book long overdue to return to Roberto - interesting read, but I haven’t progressed much as I read each book from covers then to foreword to content to introduction progressively. The AT&T guy came at about 2.30pm, just when I was getting tired of reading.
When I got my internet connection back, I continued with some research I was doing on Friday midnight into the early morn when power outage happened. I was energised again. In between I even made a trip to Walgreen to get milk and Post cornflakes – my staple, I am confused, I won’t say it is for breakfast, I eat it as and when. Resisted the huge pack of jalapenos tortillas chips and more Arizona teas - my fav snacks – I walloped 1 huge packet just before power outage and another when power came on. It took me 3 weeks to finish one when I first arrived in Houston, then 3 days more recently, now? … I cooked an early dinner.
Another Internet Outage … Errhhh
Then… it had to happen again, my internet connection was disrupted for the second time. The service centre told me to give them 1 hour to resolve the issue. In case I cranked up, which I was about to … ha ha … I didn’t like to be disrupted in the middle of day dreaming or rather creative imagination processing(??). I decided to spend the next 1 hour making corn bread – I was acquainted with corn bread back in 1992, when I worked for Cha Cha Cha, a Mexican Restaurant in Singapore prior my admission into NUS. No, I didn’t make them then, the boss’s wife Joyce made, I only ate.
Prep the Corn Bread
I got all the ingredients before Hurricane Ike but couldn’t do anything as power was out then. I started prepping - chopped 2 green jalapenos peppers – the recipes didn’t ask for it but I like these peppers, sweet corn cream style, cheddar cheese, milk, egg, cornmeal mix – stir … done. Didn’t have a smaller pan, so I use a 9″ square pan. Baked at 400 deg F for 30min or golden brown. Walah, I could smell a nice baked jalapenos aroma at the kitchenette. Left it to cool.
I retuned to check the modem, wow … it was indeed working again. As AT&T said, 1 hour for them to resolve the issue and one hour later, I got to munch into Mexican style cornbread too. Things happened for good reason for sure! I won’t know if it is authentic Mexican style, but the packet said so. Taste? Quite yummy … would prefer it spicier, next time I will add more chili.
Dad just called to ask if things were okay. Of course. Then mum. I told her about my Mexican corn bread, ever the practical mum she is, she reminded me to save some in case I lose electrical power again??!! ;~ Hasn’t she heard that words are powerful! ;[
Slightly more than half to go. Ha ha … Oh I mean the corn bread. And happily connected again. I overate, I think.
